This is a basic recipe for gnocci that I than add to various sauces. This recipe counts as my egg use for the week.
Ingredients
2 potatoes
2 c flour
1 egg
Directions
- Peel potatoes and add to a pot of boiling water. Cook the potatoes until they are tender. Drain, cool and mash the potatoes.
- Combine potatoes, egg and flour. Kneed until dough forms a ball. Divide the dough into 4 sections. Make each section into a long “snake.” Cut the “snake” into 1 inch pieces. Press each piece with a fork.

- Bring a large pot of water to a boil. Drop the gnocci into the boiling water and cook for around 5 minutes or until the gnocci floats to the top. Drain and serve.
- True, you can eat the gnocci as is. However, I like to brown the gnocci in the oven on a cookie sheet for some sauce options.
