Last week we were on the road. Let me tell you. It is hard to eat well while on the road! One day I only had a strawberry lemonade because my options were not good, not that a strawberry lemonade is a good choice, but it was better than the rest of the choices that day.
I did get a salad in everyday.

I love these pre-chopped salads I found. It makes busy days possible.


My daughter made some yummy black bean and sweet potato enchiladas.

I made Yakisoba with tofu and baby bak choy. I’m sorry I don’t have a recipe.

I made Lentil Shepard’s Pie. I’ll post a recipe later. It was good and I was able get several meals out of… since I made the meat version for everyone else there was plenty of the veggie version for me.

On Sunday, Easter I made a Middle EASTERn dinner. I know. I’m funny. I made Tabbouleh, and had a spread of olives, hummus, roasted peppers, artichoke hearts, asparagus, and pita. I figure that it was actually the perfect Easter meal because there was no way Jesus ate ham. This will become my new Easter tradition.
