Resigning My Old Eating Habits

With the opportunity to make food at home, I have been working at eating healthier meals. It has been awesome1 I feel so much better in many ways. Here are a few of the recipes and ideas I have tried in the past few weeks.

Cucumber sandwich on sour dough. This is my version. It isn’t pretty but it was delicious. I found a recipe and inspiration here. However, I admit, I improvise and don’t often follow a recipe exactly.

Roasted Veggies and Salmon. I was just winging it here and used whatever I had in my refrigerator. This ended up being button mushrooms, a yellow bel pepper, a small zucchini, a sweet potato, a leek, and asparagus. I put the salmon and the veggies on a cookie sheet, sprayed it with olive oil, and sprinkled onion powder, garlic powder, and French herbs all over before baking it for 30 minutes at 350. It was yummy and I was able to use the leftover veggies the next morning by heating up the veggies and eating them with a fried egg.

This next salad was so good, even Lillian liked it. That’s saying something. I actually followed a recipe. Sadly, I didn’t save the recipe, so I have no idea what I did or how to serve it again.

I tried this Spaghetti Carbonara and used imitation crab rather than shrimp. I am allergic to shell fish so shrimp and real crab are out. However, imitation crab is made from white fish so it is a good substitute. It made a ton of food and John and I ate it for days. LOL. I found the recipe here.

This next meal was one of my favorites. It’s called Lemon Chicken Piccata. The chicken was tasty and easy to make. I served it with simple grilled asparagus, a simple salad of lettuce, cucumber, and cherry tomatoes, and a rice pilaf. I found the recipe here. I will definitely ty this one again some time. Plus, I was able to successfully make this recipe for two instead of making food for an army that no longer lives here.

It’s strawberry season and I had to make a lovely salad of lettuce, spinach, green onions, cucumbers, yellow peppers, and grilled chicken, topped with a nice Italian dressing. I wanted vinaigrette, but I didn’t have the ingredients to make a vinaigrette and I didn’t have a vinaigrette in the cupboard. We had to make du with Italian dressing. I was pretty tasty.

This last salad is the most exciting salad. Not because I had never made this salad before but because I made this salad with the FIRST harvest from my garden. It’s a Big Mac Salad and you can find the recipe here. It was so satisfying to walk out to the garden with a bowl and some scissors and to cut my own Romaine lettuce and other greens for this salad. Once I brought it into the house John and I worked together to add green onions, a wild garlic from the yard, pickles, cherry tomatoes, turkey burger, and cheese. John made a great Big Mac sauce and we enjoyed our salad with a chaser of watermelon.

So there it is. Those are some of the yummy things I have tried in the past couple of weeks. I am planning on posting more of the delicious things I make as I continue my quest to be healthy and to resign from junk food and prepared foods. I am most excited to share the foods I will get to prepare from my garden! Resigning my old eating habits is a process. There are more eating habits to resign from, but this is a start.
