1 2/3 c whole wheat flour
1 1/2 tsp baking soda
1/2 tsp Himalayan pink salt
2 tsp ground cinnamon
1/4 c coconut oil
2/3 c honey
1/2 c unsweetened applesauce
1 tsp vanilla
1 3/4 c grated carrots
1/3 c chopped walnuts
1/2 c crushed pineapple, drained
- Preheat oven to 350 degrees. Line a 9×9 pan foil. Spray the foil with cooking oil.
- Combine flour, baking soda, salt and cinnamon.
- In a different bowl combine coconut oil, honey, applesauce, eggs, and vanilla. Stir in dry ingredients. Be careful not to over mix. Add carrots, walnuts and pineapple and carefully fold them into the batter.
- Pour the batter into the lined, greased pan. Bake for 30 minutes or until the top springs back or the toothpick inserted comes out clean. Then cool.
