Serves 8-10 servings Prep time: 10-15 minutes Cook time: 4-5 hours on low in the crock pot
Ingredients
1 medium onion, diced
3 medium carrots, chopped
3 celery stalks, chopped
1 small sweet potato, chopped
2 cloves garlic, minced
1 tsp ginger, minced
2 Tbs green or yellow curry paste (it depends on which one I happen to grab out of my fridge)
2 c dry split peas
8 c vegetable broth
2 15 oz cans light coconut milk
Directions
- Saute onion, carrots, celery, sweet potato, garlic, and ginger about 10 minutes. Pour sauted veggies into a crock pot.
- Add curry paste, vegetable broth, and split peas. Cover and cook in the crock pot about 4 hours or until the split peas are soft.
- Stir in coconut milk and cook for 15 more minutes.
- Serve.
