Vegetarian Dinner in a Pumpkin
4 servings Prep time: 30 minutes Cook time: 1 hour 15 minutes
Ingredients
1 medium pumpkin
2 c cooked wild rice pilaf
1 onion, finely chopped
3 cloves garlic
1 pck sliced mushrooms
1/2 c walnuts
1/2 c dried cranberries
2 c spinach, chopped
1 tsp oregano
1 tsp thyme
1 tsp cumin
Himalayan pink salt and pepper to taste
Directions
- Preheat oven to 400 degrees
- clean out pumpkin; season the pumpkin with salt and pepper
- cook wild rice pilaf
- toast walnuts over medium heat for 2 minutes, constantly moving; remove from heat and set aside.
- saute onions, garlic and mushrooms.
- mix walnuts, onion mixture, dried cranberries, and spices in a bowl; spoon mixture into the pumpkin; pack it tightly
- wrap the pumpkin in tinfoil and place it on a cookie sheet
- bake for 1 hour and 15 minutes or until the pumpkin it soft
- remove from the oven and let it stand for 20 minutes
- serve
