This was a great dinner packed with strong flavors.
1 Tbs. olive oil
4 c baby spinach
1 c chopped kale
1 medium zucchini, chopped
1 onion, chopped
4 oz halloumi cheese
Salt and pepper to taste
- Heat up the olive oil in the pan. Saute onion until lightly browned. Add zucchini, kale and spinach with a pinch of salt and pepper. Saute until the greens are wilted.
- Push greens to the side. Place the halloumi slices into the pan and fry on both sides until golden brown.
- Serve the halloumi on top of the pile of greens.
