It’s been a good week for veggie eating.
Monday I had a dentist appointment and my face was numb for half the day. Jamba Juice to the rescue! I had a Greens with added ginger smoothie. When my face woke up I had a veggie dog… plain. Dinner was a cabbage from the garden with veggie sausage. You can see the recipe here. I love this dish! It’s even a family favorite.
Tuesday I had a fruit smoothie with a couple of added herbs. I also made zucchini sticks and sweet potato tots to accompany a large salad.
Wednesday was a green smoothie with added herbs and Brussels sprouts and zucchini hash. You can get the recipe here. I splurged and had toast with a little fresh triple berry jam.
Thursday I decided to see how my tummy did with a little cottage cheese and cantaloupe. It was okay. However, I didn’t want to push my luck and made veggie mac and cheese for lunch. you can get that recipe here. I had a little homemade green salsa with a few chips and a few veggie tots too. dinner was super yummy. I made Greens with Halloumi. You can get the recipe here.
Friday was a busy day. I tried a second day with cottage cheese and cantaloupe. I was sorry later. I had a little more green salsa with a couple chips. I made a yummy broccoli, asparagus, mushroom and tofu stir fry. No recipe, just and dump and hope for the best. Too bad I didn’t write it down. It was one of the best flavors I have ever made!
Saturday was a LONG day. I picked all the ripe tomatoes in my garden and canned roasted tomato soup. I also made Ratatouille. so good! You can get the recipe here. I didn’t make it all pretty like usual. I just chopped it and threw it in. Had a few berries and some garlic bread to go along with it too. Other than berries, fall foods are my favorite fresh foods.
Sunday was a good relaxing day. I had an Asian salad, the leftover broccoli tofu stuff, vegetarian baked beans, watermelon and a veggie burger.
So… that was my week. Seriously, I don’t get my body sometimes. I am still getting cramps that feel like my muscles are being ripped off my legs. I am still holding steady at the same weight now for the past 8 months. Dude! I take a picture of everything I eat. I am not eating bad. I am not eating tons… well around 2 pounds of veggies a day, but that is not many calories. Sorry to vent. I am not giving this up. I just wanted to vent because after the cramps I had last night I am tired and I just don’t get it. Okay. That’s over. Time to go out and have another great veggie day.
