I am so excited my husband was able to fix the camera on my iPhone. Now I can take pictures of my food and truly report what it is I am consuming. I haven’t gotten on a scale, but the most exciting thing happened today. I put on some shorts I haven’t worn for a year and I was actually worried all day that they might fall off. Good thing I have hips fro them to rest on or my pants would have been around my ankles! Seriously! There is space between the waist band and my waist. Still not sure I want to get on a scale, but it is encouraging all the same.
Monday I ate a salad around lunch and some cherries from the farmer’s market. I had some crackers and peanut butter too. Not the best choice, but not the worst either. For dinner I made a Greek pizza with a whole wheat pizza crust, hummus, mushrooms, zucchini, tomatoes and vegan cheese.
Tuesday was a crazy day. I had berries and a salad for lunch. I was too busy to go home and make food at dinner time, so I stopped and got a veggie burrito from Muchas Gracias. Again, not the best choice and also not the worst.
Wednesday was the 4th of July. I was busy with the parade so my husband brought me some nuts and a veggie smoothie for lunch. I had watermelon, blueberries, and cantelope for dinner. My husband also brought me some grilled veggies and a piece of grilled corn as well.
Thursday was another long day of work. I had a vegan Mexican bean dip and some salad throughout the day. I also finished off the cherries from the farmer’s market.
On Friday it occurred to me that I could take a picture of EVERYTHING I put in my mouth in the day and make a collage of the photos. I decided I would do that for awhile to increase my accountability. I was noticing that I was “snacking” a little too much… all plant foods, but I know I could do better if I were to keep a completely honest and transparent account of EVERYTHING I ate. But I thought of it to late in the day and started my picture record on Saturday.
But for Friday, I made Zucchini fritters with zucchini, garlic tops and carrots from the farmer’s market. I also baked egg plant. I was very tasty. I was glad that i had left overs for lunch on Saturday.
So I enjoyed left overs of the Zucchini Fritters and egg plant for lunch. I added salad to the meal too. For dinner I had a picnic of a flat bread and veggie sandwich from Subway with my daughter and some Thai lime and rice noodle soup. AS a treat I had a piece of sourdough bread with smashed strawberries and pears.
On Sunday I enjoyed 8 oz. of carrot juice, a salad with greens from my garden, tomatoes, cucumbers, green onions, walnuts and olives stuffed with garlic. As a treat for this meal I had some Marion berries and cherries from the farmer’s market. Sunday was my one day to have an egg. I made a frittata with diced potatoes and whipped eggs and vegan cheese and served it with a spoon of pesto. I also made a whole wheat, sugar free biscuit and enjoyed that with a little bit of honey. Tasty! I will have to post recipes on a later day because I don’t have time to type them all out.
So there it is… my week on my plant based life style. What did you have for dinner this week?
Cataloging food pics sounds like a good way to track what went in. I’m also a victim of generous intermittent snacking 😉.
Your food doesn’t look like diet food at all, almost all of those look yummy 😋😀.
