Greens with Halloumi

This was a great dinner packed with strong flavors.

Ingredients

1 Tbs. olive oil

4 c baby spinach

1 c chopped kale

1 medium zucchini, chopped

1 onion, chopped

4 oz halloumi cheese

Salt and pepper to taste

Direction

  1. Heat up the olive oil in the pan.  Saute onion until lightly browned.  Add zucchini, kale and spinach with a pinch of salt and pepper.  Saute until the greens are wilted.
  2. Push greens to the side.  Place the halloumi slices into the pan and fry on both sides until golden brown.
  3. Serve the halloumi on top of the pile of greens.
