
It’s been a week or so since I last posted. I am trying my best to get back on track, it’s just that when I get to the end of the day I am often overwhelmed. So much going on!
I am grateful for my garden. It is giving me many little berries, lettuce, tomatoes and even a couple eggplants. My porch garden has many wonderful herbs and the zucchini’s are making some lovely little edibles.
I am grateful that my kids all support each other well. The one thing I may have done right by my kids was to teach them to love, serve, and support each other.
I am grateful that Lilli and I got to go to the beach last week. Lilli and her friend Jo had a great time playing in the ocean and sunning themselves on the warm sand. They tried some yoga on the beach and went for a walk down the beach to gaze on a cute boy who was surfing. We even enjoyed the sunset. I just read and soaked up the sun and the waves. It was awesome.
I am thankful for some great veggie charged meals. I tried lovely salmon on greens salad, a veggie pizza on a cauliflower crust, a “Big Mac” cheese burger salad (using only “Beyond Beef” for me. It’s awesome!), a lovely salmon with cucumber dressing salad, found a salad at Safeway and added tuna salad and anti-pesto salad to make it complete while at the beach, made a cauliflower casserole and enjoyed it the next day as left over with pickled eggs and onions that I made myself. And today I made a one pot zoodle taco thing. It was so good. I am thankful that I have been able complete successful 23:1 fasts and one 46:2 intermittent fast. Some days I feel good, others… not as good. I believe it is all part of the process.
I am grateful for my porch and my deck. I could sit out there for hours and listen to the wind and chimes.
I am grateful for the day and a half that I bounded with Lilli and we just sat and watched TV. I sure love that kid.
I am grateful for the things I am learning to increase the quality of my sleep. Some nights are more successful than other nights, but I am hopeful that I will soon drop into deep sleep and REM sleep throughout the night. I am confident that it will help my health issues the most.
I am grateful for my time with the scriptures. Again, I learn great things as I study.
