Ingredients
3 c vegetable broth
1 large onion, chopped
2 cloves garlic, minced
2 bell peppers, cooked
1 28 oz diced tomatoes
1 can black beans, drained
1 can pinto beans, drained
1 15-oz can pumpkin puree
2 Tbs chili powder
2 tsp cumin
2 tsp paprika
1 tsp pink Himalayan salt
1.2 tsp cinnamon
juice of 1 lime
Directions
- Sautee onion and garlic for 5 minutes
- Add bell pepper, cook for 5 minutes.
- Add tomatoes, beans, pumpkin, vegetable broth and spices. Stir until combined.
- Bring to a boil, turn down and simmer for 20 minutes.
- Turn off heat and add lime juice.
- Serve. Can top with cilantro, avocado, or crush tortilla chips.
