It’s been a good week of eating… even it I tried a new recipe that I wasn’t a fan and didn’t eat much of it. I was able to stay on track and eat healthy foods all week.
Monday I started the day with a berry smoothie for Breakfast. I went across the street and got a salad from the salad bar for lunch. It was loaded with veggies and I had vinegar as a dressing. For dinner we had Pumpkin Chili. Click here for the recipe. This was yummy… so yummy I ate it most of the week.
Tuesday I have veggies for breakfast. I had a salad with no dressing and a little cutie for lunch. For dinner I had left over Pumpkin Chili.
Wednesday I had a green smoothie for breakfast. I had salad and a little cutie for lunch. I tried a new recipe for dinner. I wan’t a fan so I did not bother posting a recipe.
On Thursday I had green beans and mushrooms for breakfast. I had left over pumpkin chili for dinner. I made a Greek Hummus Pizza foe dinner. Click here for the recipe.
Friday morning I had another green smoothie for breakfast. I also had the last of the Pumpkin Chili. I was too tired to think about dinner, so I just heated up 2 Morningstar veggie burgers.
Saturday morning I made shredded potatoes, onions and spinach for breakfast. I made a yummy salad with a vegan dressing I found and toasted chickpeas. It was Fast Sunday at church on Sunday, so I fasted dinner through to Sunday lunch, a 24 hour fast.
On Sunday, I made Cabbage Soup for dinner. Click here for the recipe. I made the family tacos and chicken fajitas for dinner. I made Black Bean taco filling for myself. Click here for the recipe. I also made sauted onions and bell peppers too. I ate it on corn tortillas and topped it with veggie “cheese.” Later in the evening, my husband made me Wendy’s Chocolate Peanut-butter Mousse as a desert. Click here for the recipe.
So now I am off and running into my next week. My fridge is stocked and prepped. It’s going to be an awesome, healthy week!
