Most mornings during the past week, I enjoyed a smoothie of some sort. I did add onions, mushrooms, and spinach one morning.
I ate salads all week for lunch… That’s when I took the time to eat. Getting ready for my show keeps me so busy I often don’t take to eat. Some days, if there were leftover soups to be had, I might add a cup of soup. However, soup is hard to eat on the run.
I ate a taco salad with mango salsa, Morningstar protein bits, and homemade guacamole. for one meal.

We made Roasted Sweet Potato Soup. Mine doesn’t look as good as the recipe I tried.

One day I ate a veggie burrito from a local restaurant. I have them hold the dairy.
I wasn’t feeling well on Sunday so my husband made spaghetti and meatballs for the family. He made real meatballs for everyone and veggie meatballs from me.

So that was a week. I am hoping this week is a little less hectic… but I’m not counting on it.
