Menu Monday

Week 4 of Intermittent Fasting and 60 Week’s as a Nutritiarian

Is this a habit yet. Actually… no. Everyday I make a choice. Some days the choices aren’t as good as other days. There are those busy days where a lack of planning bites you, or those days you attend a party and the best you can do is to eat a piece of cheese pizza because, at least, it didn’t have all that greasy meat. I guess I shouldn’t be surprised my weight is standing still. I need to do better at salads and veggies only. I need to prepare better. I need to make the time for the things that will heal me. But for now, I am making time for better food choices, sleep, and blogging… sort of. There is so much more I could add to be the healthy person I want to be. Sadly… a job… volunteering… parenting…. and plain old laziness get in my way.

This past week I ate:

A salad for lunch on Monday…

A bean and vegan cheese burrito for dinner on Monday…

A salad for lunch on Tuesday…

Kimchi Ramen for dinner on Tuesday… what can I say, it was fast and I had 5 minutes to make something and I didn’t prep meals over the weekend.

I ate a salad on Wednesday for lunch…

… and cabbage soup and a sour dough roll for dinner on Wednesday before heading back to the high school for opening night of my show.

I had a salad on Thursday for lunch…

But I took the time to make a Tofu Green Curry for dinner. I ate it with brown rice.

I ate left over green curry for lunch on Friday.

But I lost track of time on Friday evening and ended up needing something quick and easy… Kimchi Ramen again…

Saturday I faired better. I had a stir fry of onions, mushrooms, and Swiss chard for lunch with raspberries on the side for lunch.

I made Lemon and Dill Lentils for dinner. I posted the recipe earlier. Check it out.

Sunday I caved and ate some cheese pizza. I was raised to never waste food. I was given some pizza from a party. I couldn’t let it go to waste. So I ate a couple pieces for lunch.

I made family Chicken Alfredo. However, I made a vegan Mac and cheese from a box for myself, with a side of spinach salad and watermelon.

So… there was the week in food. Not the best choices, but better than I used to make. I am still making progress. However, I can’t say that everything is in that new habit stage… even over a year in. It would be so easy to crash and burn. I must keep at it.
