I’ve been doing well with my walking… except yesterday when I was walking home from church and bit the dust for real. Anyway, I’ve succeeded in a 45 minute walk 6 days last week and I must be speeding up my waddle because my fitbit says I now walk 1.86 miles in those 45 minutes. Eating is going well too, even with my busy life. I can tell you that I am very thankful for Dole pre-made salads in the produce section of the store. I just don’t have the time to cut and prep everything. I am also glad for left overs because left over made dinner possible this week several times!
Okay… Monday I had a Mediterranean salad thanks to Dole for lunch and an orange. For dinner I had Hoisin Tofu with zucchini, mushrooms, onions, Swiss chard.
On Tuesday Dole saved the day with a little Sante Fe salad for lunch with a banana. I had a concert to head off too after teaching voice lessons so I had left overs… tofu curry.
Wednesday lunch was a Dole Asian salad and some blueberries. I had a doctor’s appointment just before I needed to work a concert… So I stopped off and got a bean burrito. Not the best choice but I could make worse choices so I will call it a win.
Thursday Dole to the rescue again… Asian salad too. Dinner was left over Lemon and Dill Lentils with Greek yogurt. You can find that recipe here.
Friday I enjoyed a Southwestern salad and some blueberries for lunch. For dinner I tried something new. I tried sauerkraut with a vegan dog. I actually really liked it. I bought the sauerkraut but I might try making my own now that I know I like it.
Saturday I ate a salad for lunch and some crackers. I ratatouille for dinner and served it over some left over noddles I had. I loved it. It turned out so good. However, my young guests were not impressed. LOL. That’s okay. The veggie life isn’t for everyone.
Sunday I had some salad and some vegan mac and cheese for lunch. I had veggies and sunny side up eggs for dinner. I needed soft foods since I fell and my face and teethe hurt.
