Developing an Attitude of Gratitude – Day 565

I am grateful we had a day at the beach.

I am grateful for a yummy cabbage and vegan sausage dinner yesterday and that the cabbage was from my garden. I am also grateful for the Greek salad with chicken I had today. Yup. I tried chicken for the first time in 3 years. It is sitting funny in my tummy, so I most likely won’t eat chicken of beef for a year of more again. I am grateful that the tomatoes, cucumbers, onion, and lettuce in the salad all came from my garden. I made a yummy sauce out of sour cream, garlic, lemon and dill, and added olives, avocado, and feta cheese to the salad. I also tried something new that was so yummy! Cauliflower and cheese hash browns cooked in the waffle iron. Yum! Will definitely do that again!

I am grateful I got tons of chores done… laundry, a clean kitchen, the pile of stuff that has been in the dining room for weeks, watered garden and deck garden, etc. It’s been a productive day.

I am grateful that Hannah will be home for a few days. Lilli drove up to the airport to get her. Hope they drive safe. Tomorrow McKay and Myles will come with the kids to see Hannah. It will be a wild weekend.
