African Peanut Curry

Servings: 6             Prep time: 15 minutes           Cook time: 6-8 hours

Ingredients

4 cloves garlic, minced

2 medium onions, diced

2 sweet potatoes, cubed

1 Tsp curry powder

1 tsp cumin

1 tsp chili powder

1 tsp salt

2 c vegetable broth

1/3 c peanut butter

2 c crushed tomatoes

1 15 oz can garbanzo beans

1 red bell pepper, chopped

2 c spinach, chopped

1/2 c cilantro, chopped

1/4 c peanuts, chopped

Directions

  1. Add garlic, onions, sweet potatoes, spices, vegetable broth, peanut butter and tomatoes to a slow cooker.  Cook on high for 6 hours.
  2. In the last 1/2 hour of cooking add garbanzo beans, and bell peppers.
  3. Just before serving, stir in spinach, cilantro and peanuts.
  4. Serve with rice.

This is also good with 1/2 lbs thinly sliced Brussels sprouts and 1/3 c raisins added to the pot.
