Eating Well

It’s been a great week for eating!  I feel successful, especially with how busy my life has been.  I really should resign as the general manager of the universe.  LOL.

I’ve been beginning every day with 32 oz warm water, 2 Tbs apple Cider Vinegar, a dash of pink salt, and 2 Tbs lemon juice 30 minutes before eating anything else.  I also take 1 capsule of black seed oil at the same time.

Breakfasts were nearly all the same… Sautes onions, mushrooms, and spinach and a smoothie made from 1/2 a banana, 1/2 c kefir, 2 Tbs sugar-free peanut butter, 1 in ginger root, 1 tsp dandelion root powder, and 1 c assorted berries.

For lunch I ate a salad… every day.

For one dinner I had Spinach, Sun-dried Tomato and Tortellini.  Click here for the recipe.  There was a salad too.

I intended on making a wild rice and butternut squash dish, but all I had the energy for was a quinoa and Brussels Sprouts dinner.

I made Eggs with Carrots, Kale, and Yukon Gold Potatoes for a dinner.  I do love this dinner.  I love that the eggs are from the cute chickens in my yard.  Click here for this recipe.

On Super Bowl Sunday we made breakfast for dinner! I admit I splurged on the pancakes… and it was the second time in the week I had an egg (not very usual for me).  My husband got me some Morningstar vegetarian sausage too.  It’s funny.  My grand-son said it was the best meal he had eaten at my house.  What a goof!

There was a party at my house on Friday.  I didn’t want the pizza they were having, so I enjoyed left-overs.  On Saturday I practiced a 24 hour fast as part of my religious worship… well, I actually fasted 32 hours.  I did the fast for religious reasons, but I have been reading about intermittent fasting and I am considering fasting once a week for health reasons too.  Things to think about.
