
My life is a bit out of control. I am rarely home, and I am struggling to keep my plant-based diet a healthy plant-based diet. All too often, it takes a lot of prep work (time), and eating time to make a plant-based diet a success. Not only that, most of the people living in my home don’t eat the way I do. I am struggling to make meals that suit the needs of the extra people – young and old. They all like meats and treats and it is expensive to be a restaurant with many choices of meals. I can’t keep up. I have continued a bit of success as a vegetarian, but I am struggling to make every bit truly count.
Even though I am not as successful as I wish I would be (I know the fault is all mine) with living a true nutritionarian lifestyle as suggested by Dr. Joel Furhaman, I am noticing that I feel better over all. I feel better energy throughout the day. I am still full, even with a diet of all vegetables in a given day. My skin is clearer.
Here are a few tips that are keeping me moving in the right direction:
Make what I can ahead. Soup and multi-serving dishes and casseroles are a lifesaver.
Baked squashes in the fridge give me something quick. My favorite is spaghetti squash with some kind of sauce.
Cook dried beans in the insta-pot. Talk about a time saver!
Hummus. That is a life saver!
Herb tea! It’s been cold and I crave something warm. Herb tea always hits the spot.
Now… these tips are help me eat, to some extent, something that is good for me. Still. I struggle. I haven’t even been very good about taking pictures of my foods. However, starting today, I am committing to to taking the time to take that picture. If I am not proud enough to show it in a picture, I shouldn’t be eating it. So this first day of pictures (which you will see next Monday) will feature a Doritos. I am not proud of that. However, being truthful and up front about what goes in my moth will make a difference in the long run.
On the up side, I began Figure 8 exercise today, did some yoga, and read my scriptures. I am counting that as increasing my overall health as well.
