Wendy’s Italian White Bean and Cabbage Soup


Servings: 4     Prep Time: 15 minutes       Cook time:  35 minutes


2 carrots, diced

2 celery stalks, diced

1 onion, chopped

3 cloves garlic, minced

2 Tsp tomato paste

1/2 tsp Italian seasoning

1/4 tsp crushed red pepper

4 c vegetable broth

1 15 oz can white beans, drained

2 c thinly sliced cabbage


  1. Saute carrots, celery, onions and garlic about 5 minutes.  Stir in tomato paste and seasonings and cook for 2 minutes.
  2. Add vegetable broth and beans and bring to a boil.  Reduce heat and simmer for 20 minutes.
  3. Remove 2 c of the bean mixture and puree in a blender until it is smooth.  Then, return it to the pot.
  4. Add cabbage and simmer 10 more minutes.
  5. Season to taste with salt and pepper and serve and enjoy.
