I’d say I had an ok week eating wise. I do need to get a handle on what time of day I eat. I often get home late and end up eating dinner around 9 or 10 pm. With my busy schedule (work/school, rehearsals, and performances) I need to find a way to prep and pack 2 meals. Time is such an issue.
Monday was a vacation day. I ate left over Chocolate “cake” for breakfast (hey! It was vacation). Click here for the recipe. I ate Veggie pot stickers for lunch. Click here for the recipe. We made a lovely Black Bean Enchilada for dinner. Click here for the recipe.

On Wednesday I ate leftover Ratatouille for breakfast. Click here for the recipe. I ate Cabbage Soup and Salad for lunch. Click here for the recipe. For dinner we ate Ethiopian Cabbage. Click here for the recipe.
On Thursday I had left over Ethiopian Cabbage. Click here for the recipe. For lunch I had Cabbage Soup. Click here for the recipe. For dinner I had left over Black Bean Enchiladas. They got a little scrambled in storage. LOL. Click here for the recipe.
To be honest… I have no idea what I ate on Friday. It was a crazy day and I didn’t take any pictures. oops.
On Saturday I got up and made a smoothie for breakfast before I headed out the door for Marathon Day for the Bully Plays. I ate a salad some time in the afternoon. When I got home at 10 pm I wanted to eat something easy and made the poor choice of Ramen. oops again.
On Sunday I got up and made a fruit smoothie. It was Fast Sunday, but I wasn’t prepared for that. I will need to fast next week instead. For lunch I finished off the Black Bean Enchiladas. That evening I made Veggie Pot Pie. Tasty! Click here for the recipe.
I survived the week, even if I made a few poor choices. Still… I lost a pound. Go me! Let’s see if I hang on this coming week. With Marathon Day I didn’t get a chance to prep meals for the week. Bummer!
