6-8 servings Prep time: 10 minutes Cook time: 20 minutes
Ingredients
6 c chopped cabbage
2 c diced tomatoes ( 1 use 1 quart of my home canned tomatoes)
4 cloves minced garlic
1 c broccoli chopped
1 small baby zucchini, chopped
1 small onion, chopped
1 carrot, chopped
8 c vegetable broth
1 tsp oregano
5 Tbs basil
4 Tbs lemon juice
salt and pepper to taste ( I use Himalayan pink salt)
Direction
- Saute the onion, garlic, and spices until onion is translucent. Stir well so that it doesn’t burn.
- Add tomatoes and tomato paste and saute some more.
- Add vegetables and broth and bring to a boil. simmer for 10 minutes until the vegetables are tender.
- Once the vegetables are tender, turn off the heat and stir in lemon juice and fresh parsley. Add salt and pepper to taste.
- serve and enjoy!
Sometimes my vegetables vary depending on what I have on hand. I have been known to add spinach, green beans, kale, swiss chard, celery, bell peppers, etc.
